The restaurant may be modest, with just a few stainless steel or plastic tables and chairs, along with jars of pickled garlic, bamboo chopsticks, and Pho spoons. However, there's a large stockpot simmering up front, filling the air with the unmistakable aroma of cinnamon and star anise. Observe the chef, often the owner, bustling about, chopping, blanching, and preparing orders as they come in. "Chicken Pho or Beef Pho," the owner will ask you (usually, reputable Pho houses offer just these two choices), and before you realize it, a piping hot bowl of Pho will be served, casting its spell over you.
For those seeking adventure, our local guides can introduce you to some of the best hiking routes in northern Vietnam, where you won’t find another soul on your track. Trek among corn and rice paddies stretching as far as the eye can see. Encounter fresh streams running through bamboo forests. The absolute best time to visit Vietnam is from December to April when the weather is pleasantly mild with almost no rain. If we’re being particular, December to January can be a bit chilly in northern Vietnam, while April can be quite warm (though that’s not an issue if you don’t mind the heat). This makes February and March the ideal time for travel. However, if you're considering traveling during these months, it’s advisable to book as soon as possible to avoid hotels and services being fully booked.
